Biographical Info

The Morris farm is a sixth generation dairy, started by Thomas & Sarah Morris in 1860.
Thomas milked cows (by hand, of course) and made cheese, which he aged in the stone foundation of his house.

Today the farm is composed of pasture for grazing, plus corn, oats, and hay for winter feed. The cows are still milked (thankfully not by hand) in the same barn with it’s large hand-hewn beams.

Our Holstein herd averages around forty cows. They are grass-fed spring through fall. We use responsible farming practices, meaning no use of growth or milk production hormones. Quality cheese begins with high quality milk that is handmade into small batches of cheese, then aged carefully to develop complex flavors.

Kevin and Susan represent the fifth generation to work this dairy farm. Their sons, Mike and Sam, are the sixth. Kevin’s father, Bill, still works on the farm as well.

We attended a cheese making seminar in 2006 with world renowned cheese maker Peter Dixon, who has been to our farm to help us make cheese and continues to work with us.
We make several different kinds of cheese, including havarti, gouda, chedder, brie, petit suisse, blue, and cream cheese.
